A Cove Cuisine Salad and Side
Mango Cole Slaw
Coleslaw with refreshing bites of tropical Mango...
- 1/3 cups Duke's Mayonnaise
- 1/3 cups Greek Yogurt
- 3 wholes Scallions, chopped
- 1 tablespoons Lime, juiced
- 1 tablespoons Sugar
- 1/2 teaspoons Kosher Salt
- 1/4 teaspoons Black Pepper, frechly ground
- 16 ouncess Coleslaw Mix, Bag
- 1 larges Mango, diced
- 1/4 cups Pecan halves, toasted
- 3 tablespoons Cilantro, chopped
- 1 teaspoons Ginger, minced
- 1 cups Grapes, halved
- 1 Mix mayonnaise, yogurt, lemon juice, sugar, salt and pepper in a large serving bowl until well blended.
- 2 Add the scallions, minced Ginger, and stir in coleslaw mix. Gently fold in diced mango and pecans.
